I'm excited about the veggie challenge for this week. The thing is - I love vegetables - I just don't get around to prepping them before they turn droopy and start looking like science experiments. This week has started off great though - I had about four servings of veggies and three servings of fruit! Very happy about that!
I was clicking around on the Weight Watchers site looking for a veggie serving size chart. I found a link to the USDA's site with some good info on what you should get in a day veggie-wise:

I have the same problem - so much prep work! Sometimes I just can't be bothered.
